Canadian Kabuli chickpeas
Canadian Kabuli chickpeas are grown in the drier zones of the prairies and sized into calibres for markets where seed size drives value. Cream-coloured, thin-skinned Kabuli types serve retail, hummus and dip manufacturing, canning, and snack applications.
Calibres and grades
- 9 mm+ — premium large calibre for retail markets.
- 8 mm — mainstream retail and foodservice.
- 7 mm — canning, hummus, and processing.
- Typical grades: No. 1 Canada, No. 2 Canada.

How is calibre measured?
Chickpeas are screened over sized sieves; a quotation such as “8 mm” states the minimum screen with a conformity percentage. Always compare conformity bases, not just the headline size.
Which calibre is right for hummus production?
Most hummus and dip manufacturers use 7–8 mm — larger calibres carry a retail premium that processing does not recover.
